The fruit of the almond is not a true nut, but a drupe, which posesses outer hull and a hard shell with the seed ("nut") inside. The almond farmer harvests in the fall when the drupe splits open and gets ready to fall off. He shakes the drupes out of the tree, and may or may not shell it to extract the almond center. Slivered almonds have been cut up into little sticks. Almond size is communicated by the number of whole almonds that it takes to make up one ounce, so the bigger the almonds, the smaller the number.
