Harvesting pistachios is a complex and involved agricultural process - once the epicarp (outer layer) starts to dry, a mechanical shaker harasses the trees, under which a fishnet has been spread to catch the nuts that fall. Further sorting and processing finally results in nuts that are ready to market as bulk pistachios. The fact that deshelling and eating pistachios one by one fools the body and slows one down has developed the term, coined by Dr James Painter in December 2008, of the "pistachio principle".
